The clickspot on the 2D panel is the latching handle for the hatch, just click that and then roughly the middle of the hatch.

Shortly after undocking and after the visual inspection, LM +X should be facing the CSM and be 'upside down'. Manually slew the RR to PY 0,0 and you should get a good signal strength. At this point, you can switch to AUTO TRACK and it should lock.
LOPC-2 is to set up the CSM to be in-plane with the landing site for ascent and rendezvous, but I'm not familiar with the new MFD interface to help you plan it.
I agree with you that using the checklist and switching back and forth can get rather confusing. There's a possibility that you'll go out of sync between the two checklists and get something wrong. But it's actually not too bad if you understand what is going on during the clock sync procedure...
is your dP at zero or near zero? The tunnel hatches and LM hatches won't open unless dP is sufficiently low.
EVA button works and will spawn an astronaut at the LM ladder if the LM forward hatch is open. Unfortunately, all you can do at the moment is to move the astronaut around the surface.

IMO, you can skip Apollo 7 and go directly to the Moon with Apollo 8 first. Most of the stuff on Apollo 7 isn't essential for a successful trip to the Moon and back, and the timeline on Apollo 8 is more relaxed.
The obsolete checklists should work for the CSM-only missions on NASSP 8, but they don't take advantage of the new mission planning tools like RTCC MFD or MCC. That being said, using IMFD shouldn't cause a problem.

Don't worry! I'm sure everyone had trouble flying the LM after getting used to the CSM. That's an excellent video that tells you what each maneuver (CSI, CDH, TPI) aims to accomplish during the rendezvous sequence.
