Once I'm done with my Multistage Saturn Rockets for Orbiter 2016 you're welcome to use the config files I come up with. I'm working to make them more accurate than my old Orbiter 2010, plus it will be more bare bones and won't be near as bloated. I'm also using AMSO instead of AAPO.

Yeah Launch MFD is really only good for launching into orbit, I actually couldn't get it to work for me because it kept crashing Orbiter, so your best bet as far as I'm aware is to fly the ballistic flights manually.

The ICBMs (A-E) do not have a launch autopilot, since they are intended to be flown on ballistic suborbital flights and not into orbit. The only scenario in that section that has an autopilot is the mission for Atlas B (Project SCORE) which was an orbital flight.

Nice to see the old Gemini add on getting a proper update! One thing I look forward to is doing an M=1 rendezvous with Gemini 11. It would be cool to launch the Atlas Agena/ATDA and then be able to launch to it and dock in the same scenario, though that might be too ambitious.
I just tried lunar ascent with Apollo 16 and it ran normally but the cut-off was way early, I simply relit the engine and flew it the rest of the way into the nominal orbit manually. Should I compile a list of the lunar ascents that work and the ones that have issues?

I do plan on finishing my remake of the Apollo 14 soundpack I made way back when. The original I made was assembled from the highlights reel and from news audio. I also plan on doing Apollo 10 as well.
