General Question Stock delta glider questions

So I've finally managed to do my first flight to, intercept, and docking with the stock ISS thanks to Tex's video tutorials (very helpful) and the orbiter manual (not so helpful). I use a joystick/throttle (Thrustmaster Flight T.HOTAS X) along with Xpadder and FlyByWire to get all the controls I need on the stick but a few of them I can't figure out how to do. Is there a way I can bind certain actions not listed in the keymap.cfg file (such as opening the retrobay doors and using the scramjets) to a key, which could then be bound to the flight stick?

And one more thing. The manual says that there are three panels for the DG in the 2D cockpit view: the overhead panel, the middle one (dashboard? maybe?) and the lower panel which supposedly has the wheel brakes and landing gear. Well the DG I'm using doesn't have the lower panel and the functions that are supposed to be on it are on the middle panel, (just like the 2006 version I believe.) Am I missing something here?

Joy2Key has been used successfully to bind joystick buttons to more complicated keypresses.

The 2006 DG had the lower panel. The DG manual has not been updated accordingly. So you are not missing anything.
 
Ok, thanks. It took me a second to get you were saying. So the new DG isn't supposed to have the lower panel. Got it.

As for Joy2key, I have tried it and I find Xpadder to be more feature rich and it lets you switch between multiple programming sets, which really helps since I only have a limited number of buttons. The problem is that certain actions don't seem to be assigned a key to begin with. I've double checked the keymap config file and haven't found an assignment. I'm assuming there's some clever workaround for this that I haven't figured out yet.

Many functions, like brakes, airbrakes, flaps, and any systems specific to the ship such as animations, have their keyboard controls determined by the ship module, not Orbiter. This is why things like airbrakes are 'ctrl+b' in some ships and 'b' in others.
 
For the stock DG could work, but when I tried to change configuration file for XR, eventually the old standard function overlapped with the new ones, that was undesirable. However configuring Joytokey AND FlyByWire, I reached a satisfactory solution:
