Can try attaching a universal cargo deck to the shuttle and then place another cargo deck vessel where you want it on the shuttle with the first cargo deck and then use it as a camera to look through during ascent.
 
The first one(the still image) is from STS-112/7A launched on October 7 2002. View is from a camera mounted on the Liquid Oxygen(LOX) cable tray.

The video is from STS-115/12A launched on September 9 2006. View is from a camera mounted inside the LOX feedline fairing.
 
This is kind of a hijack... sorry.
What kind of cameras are space agencies using for this job?

Just made up a scenario file with that Cargo Deck method I mentioned.

Works pretty well except it stays with Atlantis after the External Tank is jettisoned. Can use any other vessel for the camera if the UCD hud display is not desired.

You drop it into your scenario folder found in the main orbiter directory. I used Cargo Deck version 3. I prefer shuttle fleet with this since I can sit back and enjoy the view since it uses autopilot!
