DGIV Delta glider 4 cockpit

I have downloaded the latest Delta Glider IV, yet when I load orbiter I see a very condensed cockpit. I have seen screen shots of a much larger cockpit with an overhead panel etc, but I have tried every key on my keyboard and can't seem to get that to display.

What do I need to do to see the full cockpit?

Screenshot you have seen was a composite of all available panels merged into one. To access top panel you press CTRL + Up Arrow and CTRL + Down Arrow to access bottom section.

And TBH that's explained in DG-IV manual.

same is true for several other vessels, the Eagle, i think, has a panel to the right doesn't it? for docking and propellant or something? haven't used it in a long time.

It's true for the Shuttle-D, XR-05 and a few others. It's a fairly standard keypress.
