Can someone explain to me the difference between them?

The Deltaglider is the original that comes with Orbiter.
The DGIV is an improved DG that Dan Steph programmed. It comes with a small cargo bay.
The XR1 is programmed by Doug Beachy. It is again an improvment from the default DG.

Each one is different and has different roles in the 'universe'.

The stock DG has very limited failure simulation and you can't perform a realistic reentry with it.

The DGIV and the DGXR1 feature several very usefull autopilots, simulate numerous failures and systems.
The DGIV has more systems and is a little more complicated in use, whereas the XR1 is often refered to as a pilot's ship.
The XR1 is one out of three XR-Series ships which feature similar usability and share a common codebase.

Try them all, they are all worth installing (except the stock one perhaps, but you already have that anyway)

The DG is the original, the DGIV is a feature heavy ship with lots of cool goodies, and the XR1 is similar to the DGIV, with a few less features, but those that it has require more active management.
