This is probably the best of all the eagles as far as feel goes.
Any plans to create a UCGO or UMMU capable version of it?

Also, you can jettison the cargo using J but is there a way to re-attach it again?

Yes. I have a Ummu Eagle. named Eagle3. In this first post in the files. It should work with the Space1999s3 module.
