Have your kids think about the sleeping situation in either microgravity, or under a constant low drive (e.g. ION engine). I.e. would the beds be flat or against a bulkhead? If so, which bulkhead assuming the thrust is from the main engines? Look at sleeping in the ISS, etc.

I think inspiring young children with the wonders of space and then showing them how to see the simulation from the hands of the Orbiter sim is an awesome thing to do. Go Dad!
