How do I use the orbiter server function? As how would I also join somebody's orbiter server session?

You're talking about Orbiter Multiplayer Project, or OMP. Use the search function, you should get plenty of responses on it

Maybe he is mistaking the FSX server as an Orbiter server.

There's also an empty space in the Orbiter config for multiplayer, last I checked, though of course it doesn't do anything.

The Orbiter Multiplayer Project (OMP) subforum has the thread with a server announcement, although I don't know if that server is still running.
Most questions about OMP are answered in that subforum too.

Be aware that OMP is in heavy development and is not bug free at all.

I don't think it is. there was a link to a web page posted on IRC which would show the people connected to the server. Last time I tried it generated a load of PHP errors which lead me to conclude that the OMP server wasn't live anymore.
