I was just reading the wikipedia entry on Iapetus and it turns out it's got some really exotic terrain: craters with sheer cliff walls 15km high, and a large ridge like a mountain range that runs almost exactly around its equator. Has anyone considered making an orulex heightmap using the data that the Cassini collected a few years ago? I have no idea what goes into making one, but it seems like you might be able at least to design in the major features like the larger craters and especially the equatorial ridge using the hi-res photos.
