To start with an eeeeasy one, you can activate ExtMFD (on the modules tab) and press CTRL+F4 to bring up as many MFDs you need, then move them on the second monitor...
The drawback to ExtMFD is that I've not seen anything which will record the positions of those MFD's meaning that everytime you start Orbiter you have to move them again.
