I am engaged in the creation of the Soyuz-MS ship at RSC Eneriya and I love this ship very much. I want to do virual cockpit for him to make it more real. I have a lot of information about this ship, including the source codes of its control system. There are 3D models and much more. I gather a team of people who are willing to deal with me on this project, or who are willing to help with its development.

Remember to be careful with IP when you are employee of RSC Energia. No orbiter add-on is worth risking your job.

Otherwise, if you plan working open-source, I can first of all recommend taking a more or less close look at the VC code of Space Shuttle Ultra.
