I'm to interest why can't install this wonderful space simulation on GNU/Linux systems?

You can with WINE, but you are lucky if it's playable, orbiter contains too much OS dependent code, and the very graphics engine is incompatible with linux. But hopefully the next version with the OGLA graphics client will increase compatibility.
