Flight Question Spacecraft Throttle

I don't know if throttle is really the correct word, but is there a way to control the "throttle" of the main engines on spacecraft? (SRBs on the space shuttle, main engine on the CSM, etc.?)
 
In Orbiter or real life? The answer to both is yes, but the "how" is different ;)

EDIT: Except in the case of real life SRMs - they can't be throttled.
 
Oh, sorry, in the game. Sometimes, I want to do things manually, but it gets messed up because the way I know how to fire the engine is pressing the "+" or "Enter" buttons on the number pad. Can someone please tell me how to control throttle in Orbiter?
 
Like page 24 in the manual Orbiter\Doc\Orbiter.pdf, section titled "Main/retro thruster controls"?

I will add to the controls shown in the manual, if you press Ctrl after pressing "+" it will latch the main engine controls at 100%.
