Transfer MFD won't let me select Mars from Earth orbit

Because transfer MFD isn't designed for such transfers. It can plot course from one orbit to another (calculating encounter with second) assuming both orbits are centered around the same main body.

For that it will be easier to use IMFD or TransX

Transfer MFD only works for Major -> Minor so you can use it to go from the Earth to the Moon but not back. You can use it to go from the Sun to Mars but not Earth to Mars.

As Loru said, you'll need TransX or IMFD.
